A little Surf, Turf & Earth dinner special tonight at Cafe Mi Casa. Broiled Walnut Encrusted Jerk Spiced Snapper with Chorizo and Red Onions over Black Rice topped with Homemade Salsa and sprinkled with Cotija Cheese. Pretty incredible and another example of throwing something together pretty much with whats already in the kitchen. 😀
